One child has a severe allergy – who should actually know what?

I’d make sure enough adults know to keep the child safe, but not turn their medical information into general team knowledge. The family and club should agree a simple plan: what the condition is, where the emergency medication is kept, which adults need to know, what those adults are expected to do and who is contacted if there is a problem. I would also avoid the medication being handed casually to whoever happens to be nearest that day. There should be a clear, repeatable arrangement. Coaches should not start interpreting or changing the child’s medical plan themselves. If anything is unclear, go back to the parent/carer and the club’s appropriate welfare/medical process. Confidentiality does not mean only one person can know. It means sharing the minimum information needed with the people who genuinely need it. The child should also be included in an age-appropriate way so the arrangement does not make them feel like a problem to be managed.
