looks aggressive until their 10 receives with nobody near him. do you make one midfielder hold or can the pair learn when only one should go?

Why don't we show coach names?
I’d coach the pair to recognise who can actually affect the ball first. If both central midfielders jump at the same time, they often leave the 10 in the most dangerous space. One can press while the other protects the pass behind the pressure. The second midfielder is not passive. They should move close enough to support the press, intercept a bounce pass or take over if the ball travels sideways. A simple reference is: if your partner has gone, what are you protecting? Train 4v4 or 5v5 central games where the opposition can score by finding a target 10 beyond the midfield pair. The two defenders quickly learn that both chasing the ball opens the target. You can still encourage aggressive pressing. The pair just need staggered roles rather than identical movement. Two midfielders moving together does not mean they move to the same place. One affects the ball; the other makes the next pass difficult.
